Packing lunches that survive until midday

Lunch packed at eight in the morning has four hours to deteriorate before anyone eats it, and most of what goes wrong in that time is moisture moving from one component to another. Solving it is a matter of separation, temperature and the right sized container — none of which requires anything elaborate.

Keep wet away from dry, always

Dressing, tomato, cucumber and fruit all release moisture. Anything crisp — bread, crackers, greens — absorbs it. Packed together, one ruins the other within a couple of hours.

Mistakes that make lunch unappealing by noon

Packing warm food is the biggest. Anything still warm creates condensation inside a sealed bag, and that moisture has nowhere to go, so bread goes soft and salad wilts within an hour or two.

Overpacking is the other. A bag filled to capacity crushes its contents every time the rucksack moves, and a sandwich compressed for four hours is a different object from the one that was packed.

Keeping it safe as well as pleasant

Food kept between fridge temperature and hot is in the range where bacteria multiply fastest, and four hours in a warm bag is enough to matter, particularly with meat, dairy and cooked rice.
